Sprout Creek Farm, in Poughkeepsie, New York, is one of the less traditional educative projects connected to the United States - Canada Province. Originally located on the campus of the Convent of the Sacred Heart in Greenwich, Connecticut, it was begun by Religious of the Sacred Heart in 1982 and moved to its beautiful Hudson River Valley location in 1990. The Farm has evolved into a full-fledged 200-acre educational / agricultural / environmental operation, complete with market. No longer owned by the province, it is now an independent 501(c)3 charitable organization, still operated by Religious of the Sacred Heart.
Sprout Creek Farm’s mission is to teach children about life through hands-on participation in the very life cycles that nourish and challenge our bodies, minds, and spirits. In addition to programs that utilize the farm and the whole environment, Sprout Creek incorporates a small cheese-making plant that processes the milk from our herds of cows and goats into delicious cheeses. It also has a retail and wholesale market to sell cheese all over the United States. The purpose of the market is to provide some internal support for the agricultural operation as ‘classroom’ and to demonstrate and teach a complete cycle of food production from soil to table.
